How is a person described below correctly (= 100% GEDCOM compliant ?) recorded with Ancestris ?

born as: Egbert Egberts
adopted: Egbert Hoyer
ennobled: Egbert von Hoyer
honoured: Dr. Egbert von Hoyer

Just add new name with a type :

Do I understand that I must first master GEDCOM before I can (largely) do what I want or need with Ancestris?

No, you don't need to master GEDCOM.
You ask a 100% compliant GEDCOM description, I have answered this question.

You can do that with Ancestris in Aries or GECOM editor.
Cygnus is not designed for this type of multi-name definition.
